  • 2 tbsp dry active yeast
  • One and 1/3 cups warm water
  • 3 tbsp shortening or lard
  • Half cup white sugar (for the flour)
  • One tbsp baking powder
  • 1/4 teaspoon salt

For the pork Asado filling :

  • Half kilo pork shoulder (cut into small, bite-sized pieces)
  • 3 tbsp cooking oil
  • 6 cloves garlic (minced)
  • One medium onion (minced)
  • Two tbsp cornstarch diluted in 1/4 cup water
  • 1/8 cup soy sauce
  • 1/4 cup sugar
  • 1 to 2 tablespoons oyster sauce
  • One tbsp Hoisin sauce (optional)
  • 2 cups water

Cooking Instructions :

  • To prepare the buns, begin with the dough. First, activate the yeast by mixing it with 2 tablespoons of sugar and warm water in a bowl. 
  • Let this mixture sit for about 10 minutes until it becomes foamy, indicating that the yeast is active and ready to assist in the dough rising.
  • Next, take a large mixing bowl to combine the dry ingredients: flour, 1/2 cup sugar, baking powder, and salt. 
  • After mixing these ingredients thoroughly, continue by incorporating the yeast mixture to form a soft dough. Knead the dough for approximately 10 minutes until it reaches a smooth and elastic consistency.
  • Once the dough is ready, grease a bowl and place the dough inside it. Cover the bowl with a damp cloth and allow the dough to rise in a warm environment for about an hour or until it doubles in size.
  • During the rising process, you can prepare the filling. Heat oil in a pan and sauté minced garlic and onion until fragrant. 
  • Add the pork pieces and cook them for several minutes until they are browned on all sides. Then, incorporate soy sauce, sugar, oyster sauce, and Hoisin sauce into the pan.
  • After adding the sauces, pour in water and let the mixture simmer on low heat for approximately 30 to 40 minutes. Occasionally stir the mixture to prevent it from burning on the bottom. 
  • When the dough has risen, deflate it gently by punching it down. Divide the dough into equal portions, shaping each portion into a ball and then flattening it.
  •  Place a spoonful of the cooled pork filling at the center of each flattened piece of dough.
  • Carefully gather the edges of the dough and pinch them together at the top to seal the filling within, ensuring there are no holes for the filling to escape. Position each filled bun on a small square of parchment paper.
  • Arrange the buns in a steamer basket with adequate space between them, as they will expand during the cooking process. 
  • Steam the buns for about 15 to 20 minutes or until they puff up and acquire a shiny appearance.
  • Finally, remove the buns from the steamer gently and serve them warm and steamy. They can be enjoyed plain or with your choice of dipping sauce on the side.
