It is widely believed to have originated in the province of Quezon, known for its rich culinary heritage. This delightful dessert is made from grated cassava, which is then steamed and often topped with grated cheese, creating a unique blend of sweet and savory flavors. This exquisite Filipino dessert features a straightforward recipe comprising only four primary ingredients: cassava, water, sugar, and lye water. Upon completion of the cooking process, the dish is cooled and then coated in grated cheese to enhance its flavor. This Kakanin is renowned for its uncomplicated preparation, delectable taste, and gelatinous texture, which is achieved through the steaming of grated cassava. It is also classified as a type of Puto, prevalent throughout the Philippines, with Amber Menu being one of the most prominent sellers of this delicacy.

  • Grated cassava or frozen cassava thawed = 2 cups 
  • Refined sugar = 2 cups 
  • Water = 2 cups 
  • Grated cheese, for toppings = 1.5 cups 
  • lye water (Lihiya)
  • In a large bowl, mix grated cassava, sugar, and water until the sugar dissolves. Add a small amount of lye water (Lihiya) to help blend the mixture.
  • Heat water in your steamer over medium heat until it boils. 
  • Pour the mixture into small pans or cup molds and place them in the steamer. Steam for 35 to 45 minutes, or until the mixture becomes sticky, semi-transparent, and slightly firm. Use a toothpick to check the consistency.
  • When the desired consistency is achieved, it is advisable to extinguish the heat and carefully remove the pichi-pichi from the steamer.
  •  Allow the mixture to cool before extracting it from the pan or molds. To expedite the cooling process, you may place the container in the refrigerator. 
  • Once cooled, proceed to remove the pichi-pichi from the molds and generously sprinkle grated cheese on top prior to serving.
