Cooling/Freezing the Leg :

Let’s Make Crispy Pata at Home
Since my family loves this dish, I experimented with different recipes at home until I was able to recreate the restaurant’s flavor. Here’s how I did it:
Ingredients :
- 1 pork leg (1.6 to 1.9 kg)
- 1 head of garlic
- 1 small onion
- 1 piece of ginger
- ⅓ cup of vinegar
- 7 to 8 cups of water
- 5 cups of cooking oil
- Iyle water
Spices :
- Use salt for taste
- Include a few star anise for flavor
- Add one tablespoon of peppercorns
- Include 2 to 3 bay leaves
Serving :
- Dip sauce:
- Half a cup of vinegar
- 2 tbsp soy sauce
- Half a teaspoon of crushed peppercorns
- 1 small red onion, finely chopped
- 1 small hot chopped chili pepper
Cooking Instructions :
- To prepare the pork leg, start by adding ginger, garlic, and onion to a large bowl with a smile. Gently place the pork leg in the bowl and pour in 6 to 7 cups of water.
- To elevate your dish, start by adding a generous pinch of salt along with a handful of peppercorns, a couple of star anise, and a few bay leaves to your pot of water. Don’t forget to splash in a dash of vinegar for that extra tang!
- Once everything is in, cover the bowl and let the leg simmer away for about an hour. Just picture it—the meat and skin slowly becoming tender and succulent, filling your kitchen with mouthwatering aromas. What a delicious journey awaits.
- Don’t forget to rotate the pork leg to ensure both sides tenderize evenly. Once you’ve soaked the pork leg, carefully lift it out of the bowl and place it on a clean rack to drain. Let it rest undisturbed for up to 30 minutes, allowing those flavors to settle in perfectly.
- For that irresistible crispy skin, take the extra step of brushing the pork leg with a few tablespoons of lye water. Then, pop it in the refrigerator overnight or at least for 5 hours. This little trick will ensure that each bite is delightfully crunchy!
- The next day, brush the skin with vinegar, rub rock salt on it, and let it rest for about 30 minutes. Finally, remove the salt from the skin using a paper towel.
- Get a large bowl and place it on the stove. Turn on the heat and add oil. Ensure that the oil is very hot, then gently place the leg into the bowl for deep-frying at 350°F (175°C) for approximately 30 minutes, or until all sides are golden brown.
